
We are in the midst of our kitchen remodel, so I’m working hard on being creative with our dinners. Although eating out can be fun and a nice break, it gets expensive! We’ve been using our BBQ which has a side burner as often as possible!

Costco has an amazing Italian sausage ravioli on sale and it’s delicious (seriously…run out to Costco after you finish reading this!). The toddlers favorite things to eat are pasta, pesto and fresh Parmigiano Reggiano cheese, so I was able to make a huge hit dinner tonight! I whipped up some fresh pesto with the basil I have growing year round and boiled water on the BBQ side burner. If you haven’t tried Parmigiano Reggiano yet, then you’re missing out. Fresh cheese is the absolute best and there was a slight sweetness that it added to the meal. Everyone asked for seconds!

Ingredients
- 1 bunch basil
- 1 T pine nuts
- 1/2 c extra virgin olive oil
- 1/4 c freshly grated Parmigiano Reggiano
Instructions
- Combine ingredients and use a hand blender to mix. Add olive oil if you prefer a thinner consistency.
