I am definitely a rum cocktail fan and mojitos are one of my favorite cocktails. I also love a good tropical cocktail but maybe that’s due to my want of being on a beach permanently. This Friday, August 16th is National Rum Day and I’ve got a couple of delicious cocktail recipes for you from Living Room and Ron Barceló.

Day & Night Daiquiri

Ingredients
- 1oz Santa Claro Rum
- 1oz Goslings
- .5oz Basil syrup
- .5oz Coco Lopez
- 1oz Lime
Instructions
- Vessel: Double rocks glass
- Garnish: Pineapple leaf, dehydrated lime
Method
- - Add all ingredients in shaker.
- - Shave vigorously over rocks.
- - Strain in glass over fresh rocks.
- - Garnish with a pineapple leaf and dehydrated lime.

Ingredients
- 1.5 oz Ron Barceló Gran Añejo
- 1 oz of lime
- .5oz of Campari
- .75 oz of pineapple juice
- .75 oz of sugar
Instructions
- Garnish: mint sprig and lime peel
Method
- - Add all ingredients in shaker over rocks. Shake vigorously.
- - Strain over fresh rocks
- - Garnish with a mint sprig and lime peel
