
A couple of weekends ago, we went to dinner at our friends’ house…first of all, let me say what a treat it is to have someone cooking for you! The food was phenomenal and beyond perfection. Cindy and Mike kicked butt on the grill and know how to entertain a group. We had a blast creating cocktail recipes and trying new wines and champagne.

To end the evening, Cindy made an out-of-this-world Blackberry Cobbler and confessed to us how simple it was to make. She served it with vanilla ice cream and I am still thinking about it two weeks later!

I’m a big fan of The Pioneer Woman, Ree Drummond and this is straight out of her kitchen. You need only 5 ingredients and the majority of the time is spent letting it bake in the oven. It’s a MUST try!

Blackberry Cobbler

Ingredients
- 1 stick Butter
- 1-1/4 cup Sugar
- 1 cup Self-Rising Flour
- 1 cup Milk
- 2 cups Blackberries (frozen Or Fresh)
Instructions
- Melt butter in a microwavable dish. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all well together. Butter a baking dish.
- Now rinse and pat dry the blackberries. Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.
- Bake in the oven at 350 degrees for 1 hour, or until golden and bubbly. If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it’s done.
Notes
- Serve with whipping cream or vanilla ice cream.
