Foodie: Menu Time

I don’t have a full week of recipes I need to work on this week, but here are a few that I am going to make and am very excited about! 

Tonight’s dish is a simple Wedge Salad, but I really can’t stand having to do “work” on my food once it’s on my plate in front of me, so I chop the lettuce and pre-mix it all. I use a head of iceberg lettuce, a pound of cooked bacon (it definitely takes a pound!), a pint of cherry tomatoes (halved), bleu cheese and Ken’s Bleu Cheese Dressing. Mix it together and it’s perfection!

I’ve been craving artichokes but for some reason they have been really expensive. I decided to bite the bullet and pick up 4 for dinner for a night this week. I love dipping mine in ranch dressing, my husband prefers mayo, but I saw this recipe for Roasted Pepper Aioli. I think I might shortcut the roasting and buy them pre made to save time.

We usually have salmon at least once a week and I love trying new sauces on top. This week, I’m going for a Creamy Avocado Sauce and it looks delicious!

Last but not least I found this recipe in my new issue of Family Circle magazine for a Grilled Chicken and Peaches Ciabatta Sandwich. This morning I watched Bobby Flay whip together this amazing salad that would go perfectly with the sandwich. It’s a Peach and Tomato Salad with Sweet Souther Dressing, Pecans and Farmer’s Cheese.

Foodie: Creamy Artichoke Chicken & Champagne Risotto

Last week I made this incredible chicken and paired it with my staple side; champagne risotto. It sounds so fancy, doesn’t it? It looks and tastes fancy as well, but is incredibly easy. I love making risotto and serve it almost weekly. It is time consuming and takes about 45 minutes, so just be prepared to have some patience. We loved this meal and I’ll definitely be making it again.

Creamy Artichoke Chicken

Ingredients
  1. For the topping
  2. 1 can artichoke hearts, rinsed, drained and chopped
  3. 3 T mayonnaise
  4. 2 T lemon juice
  5. ½ cup Parmesan cheese, grated
  6. 3 cloves garlic, minced
  7. 1 sprig fresh rosemary, minced
  8. Salt and pepper, to taste
  9. For the chicken
  10. 2 chicken breasts
  11. 1½ cups flour
  12. Salt and pepper
, to taste
Instructions
  1. Mix all the topping ingredients together, set aside.
  2. Take the chicken and pound each one to about 1/4 inch thick.
  3. Mix flour, salt, and pepper in a gallon size zip lock bag. Add chicken and toss to coat.
  4. Heat skillet over medium heat with 2 TBS olive oil.
  5. Cook chicken for about 7 min on each side until golden brown and no longer pink inside.
  6. When chicken is done place on a baking sheet. Place a heap of the topping on top of each chicken breast, covering most of the breast.
  7. Broil chicken until the topping starts to bubble and turns golden. This should take between 3-5 min.
Notes
  1. My pan is oven proof so I added the topping directly onto the chicken and broiled it in the same pan.

Champagne Risotto

Ingredients
  1. 1 cup Arborio Rice
  2. 3 cloves garlic, minced
  3. 2 T extra virgin olive oil
  4. 1 mini bottle champagne
  5. 4 cups chicken stock
  6. 1/2 cup Parmesan cheese
Instructions
  1. In a saucepan, heat chicken stock. In a frying pan, heat olive oil and sauté garlic and rice. Add champagne and stir. Once absorbed, add chicken stock 1/2 cup at a time. Continue stirring and adding stock until it is completely absorbed. Stir in Parmesan Cheese.
Notes
  1. For this meal I added chopped artichoke hearts since I had some leftover from the chicken.
