Mommyhood: Late Nights and Love

Baby D is almost a month old and twice, yes only twice, have we had super fussy nights where my husband and I were pacing the bedroom and hallway for hours on end while Baby D exercised his little lungs for us. It’s so hard not knowing what is wrong with your newborn when you’ve done everything thinkable…fed him, changed him, burped him, swaddled him, cuddled him. I’m a big fan of Google and will research any and all questions I can think of. I also have a lot of time to do this when I’m nursing at 3 in the morning! As a first-time mom, I’ve learned that your newborn will have a fussy time, mostly in the evening or late night where they are just going to cry it out; it’s also known as “the witching hour,” but can last more than an hour!

Last night, my little man finally fell asleep after simply lying on my chest for 10 minutes and then slept for 3 glorious hours! This was after 2 hours of crying, stopping, crying and stopping. At his next feeding, he wasn’t fussy at all, just happy to be held, changed and fed in the middle of the night. As I fed him, I watched his little eyes starting to droop off into dream land and his tiny hand gripping my finger and realized that he’s only this little for such a small amount of time. I know the fussiness will pass, most likely pretty soon, and he’s simply going to keep growing up. Instead of getting frustrated with the fussiness and feeling hopelessly overwhelmed, I’ve decided to embrace it. I know he’s going to have his crying times and by remaining calm and knowing that I’m doing my best for him, then he’ll relax too. 

I was watching the Today show this morning and was once again reminded that time really does fly. Days turn into a blur and you have no idea what day of the week it is or what the date is, taking a shower becomes a luxury and if you can style your hair then you’re even more ahead of the game, there will be breastmilk everywhere and getting 3 hours of sleep is a big accomplishment. Remember though…this won’t last forever and someday you’ll probably miss the middle of the night feedings and being the one that makes your crying baby instantly calm just by hearing your voice or being placed in your arms. I’m opting to treasure it all and soak it up while I can.

Recipe: Semi-Homemade Marinara Sauce

Last summer, we grew tomatoes and ended up with an overabundance, so I was busy creating recipes for salsa, marinara sauce and much more. I made a delicious spaghetti sauce that can be found on TeeWii from scratch. The tomatoes are long gone now but that doesn’t mean we aren’t craving some good spaghetti in my house. I’m a fan of taking a bit of pre made ingredients and recreating them to make your own delicious concoction.

Using tomato sauce from the grocery store is absolutely allowed. Simply add your own ingredients to make the sauce your own. I usually have some sort of fresh herbs in the fridge or growing in the garden, so whatever you have on hand works. Today I happened to have oregano (leftover from the pasta salad) and used that, in addition to the staple herbs I keep on hand. Get creative and use whatever you have in your pantry and fridge!

Ingredients
  1. 1 lb spaghetti
  2. 2 25 oz cans tomato sauce
  3. 6 cloves garlic, minced
  4. 1 T dried basil
  5. 2 T Italian seasoning
  6. 3 T fresh oregano, chopped
  7. 2 T tomato paste
  8. 2 t garlic powder
  9. T extra virgin olive oil
  10. 1/4 cup red wine (use a good wine that you would drink)
Instructions
  1. In a medium sauce pan, heat olive oil and garlic until fragrant. Add remaining ingredients and simmer for 2 hours.
  2. Prepare pasta as directed. Drain and add sauce to pasta. Keep warm and let sit for up to two hours.
Notes
  1. I like a lot of sauce with my pasta but I find that if you add it right away and serve it, then it tends to be too saucy. By letting it sit before serving, the pasta soaks up the sauce and makes it thick.

Wine Wednesday: JUSTIN Cabernet Sauvignon

It’s Wednesday, so that means wine! I first tried JUSTIN Cabernet Sauvignon at a restaurant a couple of years ago. I loved it instantly but thought it was a bit pricey, after all it was a restaurant price. Lucky me, I found that Costco sells it and for only $20.99/bottle! Yes, I would say that’s on the more expensive side, but it makes for a great hostess gift, gift to your doctor to say thanks for taking care of me and my baby, or a celebration bottle.Justin3

This cab is very smooth and the hints of a ripe cherry and coffee are apparent and a perfect combination. The wine maker suggests pairing this wine with pasta or grilled hamburgers when at home. We just happened to be enjoying grilled burgers this evening so it was definitely the perfect combination! 

Tasting notes from the vintner include: 

“AROMA:  An attractive mix of red and black cherry with blackcurrant, cinnamon, cocoa, cedar and purple flowers.

PALATE:  Medium body, with a complex mix of red and black fruit of cherries and currants, with cinnamon, cocoa, and a hint of violet in the background. The finish is long and crisp, with cherry, mineral and floral components balanced by soft tannins.”

Book Review: Girl on the Train

As I mentioned in my Mommy Must-Have post, my Kindle has been one of my saving graces during late night feedings. Of course you need to have good books loaded on your Kindle in order to make it a must-have and I started with Girl on the Train by Paula Hawkins. It was recommended to me by a friend and she was right! I couldn’t put this book down! girl on the train

The main character is Rachel and she is the girl on the train. She travels on the same train day and night and observes the people and houses on one of the daily stops. She creates stories about one couple but quickly becomes involved in their actual lives. It’s filled with suspense and a twisted plot. I thoroughly enjoyed it and it helped me get out of bed at 2am and stay awake for an hour…or two! 

Kicked Up Pasta Salad

With spring here and summer fast approaching I figured it was time to look for some pasta salads to serve as side dishes. We were lucky enough to have BBQ weather this weekend so we made burgers on the grill and I found this delicious Broccoli & Feta Pasta Salad from EatingWell.com. The entire family enjoyed it. It was filled with flavor and vegetables and was a huge hit. It’s even better the next day!

Ingredients
  1. DRESSING
  2. 1 clove garlic, minced
  3. 1/4 teaspoon salt
  4. 1 cup buttermilk
  5. 1/2 cup low-fat mayonnaise
  6. 3 tablespoons chopped fresh oregano or 1 tablespoon dried
  7. 1 tablespoon distilled white wine vinegar
  8. PASTA SALAD
  9. 16 ounces (about 3 cups) rainbow vegetable rotini
  10. 2 cups chopped broccoli
  11. 1 3/4 cups halved grape or cherry tomatoes
  12. 1 15-ounce can garbanzo beans, rinsed
  13. 1/2 cup crumbled feta cheese
  14. Freshly ground pepper to taste
Instructions
  1. To prepare dressing: Mash garlic and salt in a medium bowl with the back of a spoon into a chunky paste. Add buttermilk, mayonnaise, oregano and vinegar; whisk until combined.
  2. To prepare pasta salad: Cook pasta in a large pot of boiling water according to package directions. Drain, transfer to a large bowl and let cool. Add broccoli to pasta water and blanch for 5 minutes. Add broccoli, tomatoes, chickpeas, feta, pepper and the dressing; toss to coat.
Notes
  1. Add dressing and refrigerate up to an hour before serving.
